Ok, get about five red (more or less) potatoes, wash and peel them and them
boil until very soft. Put in a cassarole dish and add a little milk and enough
melted butter to add flavor. Mash up real good. Stir in about half a cup
shredded chedder cheese. Smooth the top and sprinke another half cup cheese
and sprinkle pieces of bacon on top. Put in the over at 350 until the cheese is
melted and just starting to get a TINY cooked on top.

Garlic and Rosemary Roasted Potatoes

2 lbs small potatoes, quartered
light olive oil
2 tsp rosemary leaves, ground with a mortar and pestle OR 1 branch rosemary leaves, roughly chopped
1 tbsp minced garlic (or to taste)
1 tsp salt
freshly ground black pepper

Toss everything together in a large bowl. Let stand 15 to 20 minutes to allow the flavours to blend. Spread over a large baking sheet and bake at 350F, stirring once or twice, until golden brown and cooked through.

Alternatively, wrap potatoes in foil and cook in campfire coals or on the BBQ.
