Japanese Salmon Over Linguine

1/2 cup olive oil
4 salmon filets, skin on
2 to 3 cloves garlic, grated with a Japanese ginger grater
2-inch piece of shoga (ginger), grated
2 naganegi, or 1 bunch scallions
1/4 cup shoyu (soy sauce), more or less
1/4 cup sake
1/8 cup mirin
Pepper
1 pound linguini, cooked
Dashi (fish broth) or chicken broth

Put oil in a pan. Put the salmon filets in and flip to coat. Rub with garlic and
ginger. Mix together remaining ingredients, except broth, in a separate bowl.

Pour half of the mixture over the salmon. Cook over medium heat, covered, for
5 minutes. Turn salmon and add the rest of the mixture. If it needs more
liquid, add broth 1/4 cup at a time. When salmon is opaque all the way
through, remove from heat. Remove salmon from skin. Pour liquid over linguini
then place chunks of salmon on top. Garnish with slivered pickled ginger.


Yield: 4 servings
Prep Time: 15 minutes
Cook Time: 15 minutes

O.k.....What the heck is mirin?? Also, I like ginger, but am not sure how to go about buying the root. Is there anything to look for, as far as a good vs. bad piece??? Do you peel it?? I think I better start watching Emeril 8O

My Aunt has a great Salmon receipe. When she visits, I'll get it and post.

Mirin is a sweet rice wine often used in Japanese cooking.

BARBECUED STEELHEAD/SALMON


You can cook the fish whole or in steaks.

Light your grill and prepare an aluminum foil tray to keep the juices from dripping into the hot coals.

Prepare a sauce of:
2 1/2 tbs vegetable oil
2 1/2 tbs brown sugar
8-10 oz of cheese-tomato sauce
1 lemon, squeezed into sauce pan
1/4 tsp dry mustard
dollop of Worcestershire sauce
1/2 tsp oregano
Let this mixture simmer for about 7-9 minutes

Have on hand:
grated Cheddar cheese
chopped parsley
sesame seeds

Brush on sauce mix, sprinkle on the sesame seeds, and cook for 12 minutes, basting two or three times with the sauce. Sprinkle or spread the grated cheese on the fish and continue cooking another 5-8 minutes without further basting. Put the parsley in the sauce mix and place fish and sauce on the table together.
