mutli-grain beer batter:
take various types of whole grain flours (whole wheat, semolina, etc),
beer (the heavier the better).
mix ingredients until it makes a pretty heavy batter. bake until crispy or fry in a
pan with some olive oil.
When i fry, (which i haven't in forever), i put about 2-3 tablespoons of olive oil
(but peanut oil is really really great for frying, but not great for your health)
and then put them in. flip, flip, flip flip flip until it's all cooked up and then set
them on a rack that's resting over a towel or paper towels. that'll let some of
the oil drip off. Then eats.
spicy batter
flour
cheyanne pepper
chili powder
paprika
water or beer
mix ingredients until you get a nice batter. dip and bake or fry (see above).
squeeze some lime over it to serve and perhaps a side of sour cream (if you're
into it) for cooling purposes.
for a vegan "sour cream" i just take silky tofu and mix the lime juice and some
lemon juice. in place of lemon juice, a bit of rice vinegar or apple cidar vinegar
will do. do it to taste, just to get a bit of a "bite" from it. I like to add the lime
juice to change the flavor.
sweet batter
flour
cinnamin
nutmeg
mint
vanilla (fresh from the bean and crushed or extract)
brown sugar
water, soy milk, or beer
mix ingredients, dip, bake or fry. sprinkle with cinnamin-sugar or powdered and
serve.
