1/2 cup Lo salt soy sauce
1 1/4 ts Onion powder
1/2 cup Worcestershire sauce
1 1/4 ts Garlic powder
2 1/3 ts freshly ground pepper
2 tb Brown sugar
1 ts Liquid smoke( if doing in electic oven. If in smoker, eliminate this
ingredient)

Mix all ingredients to make a marinade. THis recipe is enough for about 1 1/2 to
2 pounds beef.

Cut beef into thinly sliced pieces about 1/2 wide and marinade over night. Take
out the next morning and skewer each piece with a toothpick and hang it from
the oven racks. THis way you can fit a heck of a lot of beef in the oven. Set the
oven to the lowest setting and dry for 6 to 8 hours until throughly dry.

Oh. be sure to cut away all fat from the meat cause even dried fat will go bad
on you. Also, put a couple of layers of paper towels in the bottom of the oven
to catch drippings and facilitate clean up.

3 c. soy sauce

1/4-1/2 c. Liquid smoke

Marinate 1/2 hour , stirring several times.

George has made several dehydrators, each using one piece of plywood, seven
lightbulbs, and a fan from a refrigerator motor. He has cut holes for
circulation that can be covered or opened (covered with a little round flat
piece of wood that is screwed above the hole.) He also has a few guages in for
moisture level.

I can't remember how long he put the jerky in for....will find out. But the
moisture is absorbed. Someone we know made it in the oven, but the juice dripped
all over the place, so you might want to line the bottom of an oven with tin
foil. Go with a dehydrator if you can.
