Grilled Lemon Ginger Soy Salad
Ingredients
4 each - 2.5 oz. slices of firm drained tofu
Garlic seasoning to taste
Juice from 1 lemon
1/4 rice wine vinegar
1/4 soy sauce
1 tablespoon sesame oil
2 teaspoon grated ginger
1 teaspoon white pepper
2 tablespoon sugar
16 oz. salad mix
1 sliced tomato
1 chopped green onion
Directions
Drain and slice the tofu into strips 1/2" -3/4" in width and about the size and shape of your palm. Season with the garlic seasoning and place on a hot, well oiled grill (they can also be sautéed in a pan). Allow to cook 3 - 4 minutes per side until golden in color and well marked. In a small bowl, mix the lemon juice, vinegar, soy sauce, sesame oil, grated ginger, white pepper and sugar. Whisk to incorporate and set aside. Build a bed of the lettuce and sliced tomato and top with the grilled soy slices. Dress with the lemon ginger dressing and garnish with the chopped green onion.
