I am having company in August, and they do not eat meat only fish. I would appreciate any easy to do fish dishes you might have. Suggestions on the best type of fish to buy would also be appreciated... icon_biggrin.gif

SPICY BROILED SALMON
4 salmon steaks, about 6-8 oz each
lime slices, to garnish

Marinade:
4 garlic cloves, chopped
2 tbsp extra-virgin olive oil
pinch of allspice
pinch of ground cinnamon
juice of 2 limes
1-2 tsp marinade from canned chipotle chilis or bottled chipotle chili salsa
1/4 tsp ground cumin
pinch of sugar
salt and pepper

To Serve:
Tomato wedges
3 scallions, chopped
shredded lettuce

1. Mix all the marinade ingredients in a bowl.

2. Coat the salmon with the marinade, then place in a non-metal dish (I just use a Ziplock bag). Let marinate for at least an hour or overnight in the refridgerator.

3. Transfer to a briler pan and cook under a preheated broiler for 3-4 minutes on each side. Can also be grilled on the BBQ.

4. To serve, mix the tomato wedges with the scallions. Place the salmon on individual plates and arrange the tomato salad and shredded lettuce alongside it. Garnish with lime slices and serve.

Another great place to find recipes is www.epicurious.com where you can search for recipes by ingredient or the name of the dish. Check with your local fishmonger to find out what is in season and best available, then you can search for recipes.
