Full Version: Mom's eggrolls and wontons.

When I went to a chinese restaurant with a friend many many moons ago (something like 10 years!) I ordered wontons.. now, I'm used to mom's wontons which have stuff in them.. this waiter brings me out a bunch of fried wonton SKINS! Ack! My friend started giggling cause I was arguing with the waiter about how it was supposed to have stuff in them..
Anyway... on to the recipes..

Mom's eggrolls
You're gunna need a package and 1/2 or eggroll wrappers (not eggroll skins.. they work, but eggroll wrappers are best! If you're making them as a snack or an appetizer, you can use won-ton wrappers.)
1lb lean ground beef (you can omit if you're a vegan!)
1 head cabbage
3 big carrots (4 if you're using small.. not small as in baby carrots though!)
1 onion (preferably yellow.. if you like onions add another one!)
2 potatos (3 if you're using small!)
a few stalks of celery (we don't measure in this family.. can you tell?)
soy sauce, sweet and sour sauce, garlic powder, season salt and pepper.
Oil for cooking

This gets messy! But it's worth it!
Cook your ground beef, sprinkle it with season salt, garlic powder, pepper, a splash of soy sauce and a bit of sweet and sour sauce to taste. Cooking. Make sure you cook it well, drain and blot (you can omit the blot if you don't mind the grease!)
use one of those handy dandy salad shooters (or a cusinart bfood processer.) Shred your onion and potato and toss in a pan with a little oil (one or two glugs!) cook all the way through. Shred your cabbage, carrots, and celery toss in the pan with the onion and potato. Stir in your meat and mix well.
In a shallow pan heat your oil (you have to get it pretty hot!)
While your oil is heating, get out the eggroll wrappers. You'll need a small glass of water! Seperate your eggroll wrappers one at a time, wet your finger and run it around all four sides of the eggroll wrapper (basically.. make a square with your finger!) don't get it soakin wet though. Put your filling in the middle of the eggroll wrapper, fold up the bottom and top and then roll one side to the other. Put in the oil to cook, make sure it gets golden brown but not burnt! Serve warm with soy sauce and sweet and sour sauce. They are also yummy cold!

To make the wontons, you use 1/2 a head of cabbage, 3 potatos and 2 onions. No carrots or celery (unless you want!) cook the same way as eggrolls.

Not that I can probably even remember how to cook (seriously I haven't cooked anything in about 5 years) but what kind of cheese do they use in fried cheese wontons? I love those things!

White chedder would be good.. or mozzarella. Yum... now I'm starving icon_smile.gif No breakfast for me today cause I'm going out for lunch!

Never heard of cheese wontons, but...

Crab rangoon has cream cheese and crab meat. YUM

I can't believe you guys haven't heard of cheese wontons...must be that world famous Texas Chinese Food or something.

Yep, just like jalapenos on sushi....yuck! I can tell you one thing: You won't find cheese wonton at an authentic Chinese restaurant.
